Kombu Dashi Tamari: Infused with kombu, harvested off the southeastern coast of Hokkaido, Japan, this tamari delivers a deep, savory umami flavor. Our kombu is hand-harvested from the wild in the clean, cold waters of the North and sun-dried on white sand beaches. It's rich in glutamic acid which enhances the flavor with a pure, authentic umami taste.
Shiitake Dashi Tamari: This bottle is infused with dried shiitake, a prized mushroom known for its rich, earthy flavor and meaty texture. The dried shiitake mushrooms we use are certified organic and of high-quality. When dried, they intensify in flavor due to the presence of guanylic acid, creating a concentrated umami profile.
Spicy Dashi Tamari: Infused with takanotsume peppers, or "Claw of the Hawk," this tamari adds a bold, spicy kick. Takanotsume peppers we use are rare, prized peppers grown exclusively in Japan, known for their distinct aroma, rich flavor, and intense heat.
How It Works:
To create your own dashi, simply pour 1/3 of the included SAN-J Organic Tamari into each of the three glass bottles provided and let the ingredients infuse:
- Kombu Dashi Tamari and Shiitake Dashi Tamari: Allow 2 weeks for the flavors to fully infuse and develop their rich, umami-packed taste. The longer you let them age, the more complex and intense the dashi becomes.
- Spicy Dashi Tamari: The heat from the takanotsume peppers infuses after just 1 day and will continue to evolve, intensifying over time for a deepening level of spice.
Over time, the tamari transforms into a beautifully layered dashi, perfect for enhancing all your culinary creations. Whether you're cooking traditional Japanese dishes or experimenting with cross-cultural flavors, you’ll enjoy a depth of flavor that only improves as the Dashi Tamari matures.
